To create matcha, tea plants are shaded for the last few weeks before harvest, encouraging the leaves to develop higher levels of chlorophyll, caffeine, and L-theanine. Once picked, the leaves are briefly steamed to halt oxidation, then stone-ground into a silky fine powder — preserving the freshness, colour, and nutrients in every granule.
